Dizi Salad

I'm back from Israel, and it was very hot. Soooo hot that I have decided not to go there in August again, my next visit will be in the winter. Still, my son and I had a great time catching up with relatives and friends.

I thought I would be looking at lots of jewellery while I was there, but it was... too hot. We did visit the Israeli Museum in Jerusalem which is an amazing place, and got to see some ancient jewellery, as well as the Dead Sea Scrolls.

We did quite a lot of hanging out in a small Cafe come Laundrette of all things, right near Dizengoff Fountain. The place is called Dizi, and they have strong air conditioning, free WiFi, and nice food. A useful combination. It's also very friendly and laid back, and I recommend it if you find yourself in that part of the world.

There is a really nice salad there, which they simply call Lentil Salad. My friend Nili and I analysed the ingredients (so we had to sample it a few times) so that I could make it at home.

Here is how I made it yesterday and it was delicious, pretty much like the original version. I think it's healthy too...

Dizi Lentil Salad

I packet Rocket (about 100g) - chopped
5-6 fresh mint leaves - very finely chopped
2 tomatoes - finely chopped
1/2 small red onion - very finely chopped
1 cup cooked quinoa (I cook it like rice, with a little salt)
1 cup cooked small brown lentils
4 small cooked beetroot, chopped (I bought vacuum packed ones, not pickled)
olive oil (1 tbl.)
lemon juice (squeeze)
salt and pepper - to taste
Feta or goat's cheese to grate on top

Mix all the salad ingredients well and season simply with the oil, lemon juice, salt and pepper. Grate the cheese on top. Serves 2.

  1. How lovely to visit family - hope it was an amazing trip. Personally, I would LOVE to see the museum there ... I get such inspiration from looking at the jewelry. That salad looks absolutely delicious! Will have to try this
